New Years Eve is a great time for appetizers...bite size food to enjoy throughout the night. Here are a few recipes that are so easy and delicious you will make them all year long:)
Happy New Year!!!

Hogs in a blanket
Chris Court/Food and Wine
Hogs in a BlanketActive time: 20 minutes
Total time: 50 minutes
Servings: 36 Hors D'Oeuvres
This fun, high-brow take on pigs in a blanket swaps spicy andouille sausage for the hot dogs, with sweet mustard chutney as a condiment.
Ingredients
  • 7 ounces all-butter puff pastry, thawed and cut into four 5-inch squares
  • 1 large egg yolk mixed with 1 tablespoon of water
  • 4 andouille sausages (3 ounces each)
  • 1/4 cup Major Grey's chutney
  • 2 tablespoons whole-grain mustard
Make ahead: The unbaked sliced rounds can be frozen for up to 1 month. Thaw before baking.
Preheat the oven to 375° and position a rack in the center. Arrange the puff pastry squares on a work surface and brush the top edges with the egg wash. Place the sausages on the bottom edges and roll up the pastry, pressing the edges to seal. Freeze the logs for 10 minutes, or until firm.
Cut the logs into 1/2-inch slices and place them cut side up in 3 mini muffin pans. Bake for 25 minutes, until golden and sizzling. Turn out onto a paper towel-lined rack to cool.
Meanwhile, in a mini food processor, pulse the chutney and mustard just until the chutney is chopped. Spoon a dollop of the chutney mustard on each slice and serve.

Fig squares

Tina Rupp/Food & Wine
Fig and Stilton SquaresActive: 20 minutes
Total time: 3 hours and 15 minutes
Servings: Makes 4 dozen squares
After baking flaky squares of puff pastry they are topped them with sweet fig preserves and pungent blue cheese.
Ingredients
  • One 14-ounce package all-butter puff pastry, thawed if frozen but still cold
  • 1/2 cup fig preserves
  • 3/4 cup crumbled Stilton cheese (4 ounces)
On a lightly floured work surface, roll out the puff pastry to a 16-by-11 1/2-inch rectangle. Trim to form a 10 1/2-by-15-inch rectangle. Transfer the pastry to a large rimmed baking sheet and cut into 1 3/4-inch squares; you should have about 48. Freeze the squares until firm, about 30 minutes.
Preheat the oven to 375°. Line a large rimmed baking sheet with parchment paper. Arrange 12 squares on the sheet and cover with more parchment paper. Top the squares with another baking sheet, bottom side down. If you have another pair of baking sheets, repeat with 12 more squares. Bake the squares for about 35 minutes, until the pastry is golden. Transfer the squares to a rack to cool. Repeat to bake the remaining squares.
Return as many cooled squares as will fit to a baking sheet. Top each square with 1/2 teaspoon of the fig preserves. Sprinkle with the Stilton and bake for about 5 minutes, until the Stilton is melted. Serve warm or at room temperature.

Potato crisps with sour cream and chive dip

Potato Crisps with Chive Sour Cream DipContributed by Grace Parisi
Total time: 40 minutes
Serves 4
Grace Parisi makes brilliant use of throw-away potato peels: She deep-fries them until they're crispy, then sprinkles them with Parmesan. An utterly addictive snack, they're great with cocktails, beer or wine.
Ingredients
  • 2 tablespoons snipped chives
  • Freshly ground pepper
  • Kosher salt
  • 2 tablespoons freshly grated Parmigiano-Reggiano cheese
  • 1/2 cup low-fat sour cream
  • 3 cups canola oil
Thick peelings from 3 pounds of Yukon Gold or russet potatoes (roughly 1-by-3-inch strips)
Preheat the oven to 350°. In a large saucepan over moderately high heat, heat the oil to 360°. Fry the potato skins in batches, stirring occasionally, until browned and crisp, 2 to 3 minutes per batch. Using a slotted spoon, transfer each batch of potato strips to paper towels to drain, then sprinkle with salt immediately.
Transfer the potato strips to a baking sheet and sprinkle them with the grated Parmigiano-Reggiano. Bake for 3 to 4 minutes, just until the cheese is melted. Let the crisps cool, then transfer to a bowl.
In a blender or processor, puree the sour cream with the chives and a pinch of salt and pepper until the chives are finely chopped. Transfer the dip to a bowl and serve alongside the potato crisps.

Holiday Cooking Hacks

 I love a good hack...make my life easier...do things quicker...Awesome!
Here are some that could come in handy and make cooking this Holiday Season a little easier.

1. Getting pomegranate seeds out.
I love pomegranate seeds but getting them out without a stain or mess can be tricky.
If you cut it in half without going through it just enough to break it apart. Take one half in your hand with seeds facing your hand fingers sort of open to allow seeds to fall into a  bowl. Wack the rhine side of pomegranate gently with a wooden spoon and seeds will fall into the bowl-magic:0

2. Eggshells
when you cook and crack an egg every so often a shell gets in. Getting it out can be tricky since it is so slippery. Use a large piece of the shell and scoop it out. wetting your fingers is another good way-who knew?

3. Softened Butter
when your in a hurry or just forget to soften your butter for your recipes here is a  couple of solutions:
Put hard butter in a plastic baggy-quart size and hit it with a rolling pin until soft.
Cheese grater-grate the butter-walah!

Happy Holidays!!!

Unless you are the Rock or Jillian Michaels leave me alone when I am working out at the gym!:)

Seriously there should be gym  Etiquette or rules.
The is what happened to me the last time I worked out at the gym... a guy, the one that asked me to let him in the gym as I was going in because he card didn't work-no problem it could happen to anyone I thought nothing of it.
Then the other day he approached me to thank me and tell he thought I looked like Suzanne Somers-he stopped me from working out-which I didn't like but I was nice and polite.
He went too far the last time I worked out. I was getting my machine ready., adjusting the weights, putting down my towel when I felt someone's presence-yes the same guy. He started saying really loud that isn't enough weight that is way too light! I said I am adjusting it little by little and he said it again. I was really caught by surprise and instantly embarrassed. Then he said after all you are Suzanne Somers-I died-really? I was polite and answered him. He proceeded to say it is in my mind. I said probably. I was so embarrassed. I sat on my machine and had a smile on face which is what I do when I am embarrassed and erased it and tried to focus. Then I got really mad thinking-he was analyzing my workout-I didn't ask for his advice...what the H...? I gave my cardio machine a really good workout afterwards!
I am feeling anxious because I need to workout today...I am going earlier to try to avoid him-I think he works out in the afternoon when I try to think back when I have seen him-I do not want confrontation but I do not want to deal with him anymore. I have had people look before  but I just ignore them and it is not an issue. I try to keep to myself , turn up my music really loud, workout and leave-the good old days:)
My son told me to tell him to F... Off-really not my style, plus that isn't right.
My husband said I should change gyms-but it is closet to my house and why should I have too? He is my age or older he should know better.
My idea is avoidance-time will make him forget me.

Make you own snow fun project to do with kids or DIY Holiday Decor

Make your own sparkle snow for glorious Winter play. This stuff is so fun we could not keep our hands out of it!Make your own sparkle snow for glorious Winter play. This stuff is so fun we could not keep our hands out of it!2483222Makenzie TorresChristmas
You can use it to jazz up holiday decor, sprinkle it on your holiday table or mantel, or build little snowmen or snowballs. This is also sure to entertain kids, if you want to give them a fun (slightly messy!) project that cleans up easily! The best part is that it doesn't melt, so it will still look like powdered snow the next day.

Perfect Holiday Breakfast made easy!

Love this idea for Christmas morning breakfast!
I would prep the ingredients the night before and have them in bowls ready to assemble quickly.
I would also make a coffee cake and fruit bowl the night before. A great Christmas morning breakfast/brunch for your family and guests so you put it together quickly and enjoy the morning too:)

Are you playing host or hostess this holiday season? We scoured the Internet to bring you these Pinterest-approved holiday hacks — fun, festive tricks you can try around the house to make things a little merrier!
Video: TODAY.com’s Meena Duerson shows Matt Lauer how to make some easy holiday crafts and meals, including breakfast cupcakes with sausage, onions and eggs.
1. Breakfast "cupcakes"
When you have a house full of guests, the last thing you want to be doing is making and cleaning up meals for everyone. This super simple trick makes feeding a big group easy, and people can munch on these breakfast "cupcakes" whenever they stroll through the kitchen — and just toss the wrappers in the trash. No dishes!
Mini Breakfast Casserole
I would switch it up a little. I would use bacon, add shredded potatoes in the bottom mix with butter salt and pepper and bake for 7 minutes then add egg mixture(I would decrease onions to 1/4 cup).

Everyone tells me I look like Sarah Jessica Parker-who is your twin?

 Who do you look like?

I like to think I am unique...but apparently that is not the case:)
I have had so many people- more than I would like, say to me... I know who you remind me of...
has anyone ever told you-you like Sarah Jessica Parker?
When I look in the mirror I do not see it.
It has become a joke in my family because it really bugged me for a while...which my family found absolutely hilarious-especially when they were there when someone would ask me.
I am a good source of entertainment for my family:0

Then I was like ok- I'll own it. She is a cool chic-I would love to be in as good of shape as her-I am working on that:)

I had a client last week say it. Wondering why people say it.. I said I heard it more when my hair was longer and darker-she said no it is not your hair it is your face:0

A couple of days ago at the gym a man around my age approached me when I was working out-which I do not like-but took out my ear phones and was nice. He said has anyone ever told you-you look like...I was ready for JSP and he said Suzanne Somers? I said not for a long time...when I was younger. I told him lately I have been told I look like Sarah Jessica Parker. He got a weird look on his face and said I do not think she is pretty. I said I do not see it...then he proceeded to say now you are going down hill:0 He said remember when you let me in the gym when my card didn't work? I said yes. He said I wanted to say, "Thank you." I said no problem. Then he said , Sorry I bothered you I just saw you and kept thinking you look so familiar-then I realized you look like Suzanne Somers-I just had to tell you.
All I could think of is Thank you would have been fine and leave it at that:) I didn't say that but that is what went through my mind:) Gosh that sounds bitchy but I am being honest:)

I try to roll with what life brings...and have a sense of humor-not take it too seriously:)

Herb Puffs on Blue and White Plates

Smoked Gouda and Herb Puffs

Ingredients

1 cup water
2 1/2 tablespoons unsalted butter
1 teaspoon salt
1 cup all-purpose flour, sifted
3 large eggs
4 ounces smoked Gouda, diced
2 tablespoons chives, thinly sliced
1 tablespoon thyme, minced
1 tablespoon cracked black pepper

Directions

1. Preheat oven to 400° F.
2. Place water, butter and salt in a medium saucepan and bring to a boil.
3. Once the mixture has come to a boil, add flour and quickly stir with a wooden spoon until a ball of dough forms, 3 to 5 minutes.
4. Transfer dough into a stand mixer fitted with a paddle attachment and mix over medium speed, allowing steam to escape.
5. Once steam disappears, 2 to 4 minutes, begin adding eggs one by one, scraping down sides of bowl for even mixing.
6. Remove mixture from the stand mixer and gently fold in remaining ingredients.
7. Scoop heaping tablespoons of mixture onto a parchment-lined baking sheet, 1 inch apart, and bake for about 25 minutes, or until golden brown. Serve warm.
OMG! Who would have thought-how yummy!

Ingredients

Avocado Fries
1 avocado, sliced into 1/4-inch slices
1/2 c. milk
1/2 c. flour
1 egg, beaten
Canola oil, for frying
Lime Sriracha Mayonnaise
1/2 cup mayonnaise(my husband does'nt eat mayo so you could substitue with geek yogurt or sour cream)
Juice of 1/2 lime
Sriracha, or other spicy chili sauce

Directions

Avocado Fries
1. Fill a skillet with oil until it is about 1/4- to 1/2-inch full. Heat on high until oil sputters when a drop of water is dropped in.
2. Place the milk, flour and egg in three separate shallow dishes. Beat about 1 tbs. of water into the egg mixture. Dunk a slice of avocado in milk, then flour, then eggs, then back in flour. Place each slice on a plate until you’ve dunked the whole batch in batter.
3. Slowly add the slices to the oil. You don’t want to overcrowd the pan, so stop before they all start touching each other. After about a minute, you’ll see the edges turning brown. This means it's time to flip them over. Allow them to cook for another minute, then remove them from the skillet and place on a plate lined with paper towels.
Lime Sriracha Mayonnaise
To make the mayonnaise, mix together the mayo, lime juice and Sriracha. Add the Sriracha to taste, depending on how spicy you want it. Serve with your avocado fries and enjoy!

Wisdom Teeth surgery 101

My son recently had his impacted wisdom teeth surgery. I never had this so I wasn't sure what to expect.
Have them dress comfortably-I recommend sweats.
When he was wheeled out to the car in a wheel chair-he was very loopy. When he got in the car he started making weird noises-almost humming. Then he started talking. The person before him had to come back to the doctors office because he swallowed half of his gauze minutes after leaving, so I tried to keep him from talking. He wanted to ask me questions so I had him write me...he wondered how he got in the car?
I got him home and settled then headed to the pharmacy for his pain medicine and Ibuprophine. Anti-nausea medicine script -the doc said only fill it if needed. People that are very thin get nauseas. He said-my son felt sick to his stomach  but didn't throw up so he tried to take it only twice a day-he is 180 pounds. They must have something in their stomach before taking the medicine.
The doctor recommended ice packs for both sides of his face-wrap a scarf around to hold them in place for the following day there would be swelling. Boy was he right-my son's face looked like a puffer fish:) Poor guy- I don't like to see him in pain-cannot wait until he feels better.
He refused to do the ice packs like that-he didn't want to look funny-he used different words:0
They cannot use a straw-they cannot suck.
Purchase extra gauze-my son went through all his and was still bleeding on one side-one side was definitely worse than the other.
Eating is tough,  keep in mind-when they get home they cannot feel there tongue or face when he ate it just ran down his face-I had towels for it to drip on-messy.
What he could eat was:
Chicken broth, Scrambled eggs, yogurt, milkshakes, apple sauce, jello and mashed potatoes.
The second day it is important for them to swish warm salt water 3 times. Do not do the 1st day.
It been a few days, now-he is starving and frustrated with what he can eat-last night he was able to eat rotisserie chicken in little pieces. I made him lemon chicken Greek soup-it had orzo so he didn't have to chew.
Lots of patience and comforting:)

Here it is my favorite cookie recipe that I make at the holidays.
I had them when visiting my in-laws. I could not leave them alone...they kept calling me...Kim have just one more:)
Nancy is an excellent cook and I had to ask her for the recipe.
I make them every year but give some to friends and neighbors so I do not eat too many.

Cookie batter:
1 cup Butter (2 sticks) soften to room temperature
1 cup Sugar
2 Large Eggs

1 cup chopped Pecans

Chocolate Dip:
1 cup Semisweet Chocolate Chips
1/8 of a paraffin wax bar-shaved-melts quicker

Directions:
Beat butter and sugar in a large bowl until creamy. Add eggs and vanilla beat 2 more minutes. Add dry ingredients-mix well. Add pecans and mix by hand.
Divide the dough in half, roll into logs and wrap with plastic wrap. Pop in the fridge for at least 2 hours or overnight.
Preheat oven to 350 degrees.
Remove one log from the fridge at a time, unwrap and use a sharp knife to cut ¼ inch slices place on non-stick baking sheets.
Bake for 8-9 minutes.
Let cool on baking racks.

Put chocolate chips and wax in a glass bowl in microwave for 20 seconds stir repeat-do it in slow so it doesn’t burn.

Raising Teenage boys

Raising teenage boys/men is tricky sometimes making them happy or saying the right thing.
I try to listen and be there for them. I  do things that will make them Smile and make them Happy.

Little things like...

My son Brandt told me he gets really hungry after school so when I went shopping and I got popcorn chicken(he loves those) just before he got home so they would still be warm and had that and a jar of pepperoncini's (he mentioned he wanted those one day)-by his computer which is the first place he goes when he comes home.  When he got home I heard him run up the stairs and gave me the biggest Hug!

My son Blake is visiting his grandparents in Arizona right now when he comes home he has to have oral surgery-impacted wisdom teeth-ouch! So I am cleaning his room and washing his bedding...I want it to be fresh and comfy so he can sleep and not be disturbed.
I told him I will be his nurse and be there for whatever he needs:)
There is a naughty side of me that wants to video tape him when he is on pain killers:0
Some of the videos of people on them are hilarious! I won't...I'll be good:)

Recently my son Brandt wanted cut up celery he asked me to do it just as I got settled on the couch and we had started watching a movie. I thought he is old enough, so I said" Why don't you do it?"
Moments later... he said I cut myself-my heart sank-it was bad. Instant Mom guilt:(
He said I am going to need those finger condoms for when I take a shower. I said you mean covers:) The next day I searched a few stores and found them. He was on his computer with his microphone on gaming with his friends.  So when I got home, I said,"I got your finger condoms" nice and loud..I knew it would made him laugh and gave him and his friends something to talk about.
I didn't expect what my older son blake did. He always check the bags when I shop-he takes inventory of what food I buy:) Anyways, he saw them and instantly started laughing. Before I knew it he was blowing one up and popping it making jokes..it doesn't take much to entertain my kids-good silly times:)

Little things they do will make my day and let me know they Love me:)

When I clean and use strong cleaners my son Brandt turns on the fan and says, "Mom you shouldn't be breathing in those fumes"

My son Blake calls me when he is gone he knows it is important to me.  The first day he tried twice and I missed both calls so when I talked to him he had thought it out and told a set time he would call so I wouldn't miss his calls.

My son Brandt will say to me "Mom, can I have a hug?"

My son Blake will not leave me alone if I am mad at him-literally- which drives me crazy:0 It takes a lot for me to get mad and I can't just get over it instantly. He wants a kiss on the cheek and know we are good until he will leave me alone-which when I think about it is really, really sweet and a good way to be:)
It is funny because my husband says how come you forgive the kids so quickly and not me?

They are the Best decision I ever made:)

Easy Holiday Party ideas including recipes!

Set the Scene
Set the scene!

Transform an ordinary living room into a cocktail party space by renting just a few high-top cocktail tables. This gives guests a place to rest their drinks and bites, and it encourages them to mix and mingle throughout the entire room (not just by the bar). Rental tables can be unsightly, so cover them with linens in coordinating colors, like this metallic gold and black fabric. Stash a few ornaments at the center of each table and, if you'd like, additional jewel-toned floral arrangements.

Quick Fix

Bottoms Up
Festive fun cocktail to great your guests with.
   Candy Cane Martini

ingredients

  • Garnish
  • Peppermints or small candy canes, for garnish, optional
  • Lemon or lime slices, for garnish, optional
  • Martini
  • Ice
  • 4 slices fresh ginger
  • Pinch fresh mint leaves
  • 2 ounces (1/4 cup) vodka
  • 1/2 ounce (1 tablespoon) simple syrup*
  • Special equipment: Chilled cocktail glass

Directions

Make garnish first: Place red and white candy canes or peppermint candies in a resealable plastic bag. Use a rolling pin or a can to pound until as fine as sugar. Place the pounded peppermint in a small plate. Rim the glass with a slice of lemon or lime and dip the rim into the peppermint. Chill the glass.

Mix the ice, ginger, mint, vodka, and simple syrup with in a cocktail shaker and shake. Strain into the prepared chilled cocktail glass. Garnish with whole mini candy cane.

Notes

Simple Syrup is made by combining one part sugar to one part water and stirring in small saucepan over medium heat until combined. Cool before adding to cocktail recipes.

  2. Combine tangelos (or tangerines), bell pepper, cilantro, scallion, jalapeño and 1/4 teaspoon salt in a food processor or blender. Pulse to form a chunky salsa. Set aside.
  3. Beat eggs in a small dish. Whisk flour, paprika and garlic powder in another small dish. Combine coconut and the remaining 3/4 teaspoon salt in a third dish.
  4. Peel shrimp, leaving the tails on. Butterfly the shrimp by cutting halfway through the back, stopping at the tail, so they will stand tail up. Dredge the shrimp in the flour mixture. Dip in the egg and then coat with coconut, leaving the tail uncoated. Stand the shrimp tail-up on the prepared baking sheet. Discard any unused dipping mixtures.
  5. Bake the shrimp until cooked through and the coating is starting to brown, 10 to 12 minutes. Serve the shrimp with the salsa.
