I would prep the ingredients the night before and have them in bowls ready to assemble quickly.
I would also make a coffee cake and fruit bowl the night before. A great Christmas morning breakfast/brunch for your family and guests so you put it together quickly and enjoy the morning too:)

Ingredients:
- 1/2 pound sausage or bacon
- 1 dozen eggs
- 1/2 cup chopped onion
- 1/4 cup chopped green pepper
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 cup grated cheese
- Preheat oven to 350.
- In a skillet, brown the sausage or bacon over medium heat; drain.
- In a large bowl, beat together the eggs. Add onion, green pepper, salt and pepper. Stir in meat and cheese.
- Ladle into muffin cups coated with cooking spray. Bake 20-25 minutes, or until a toothpick in the center comes out clean.
- Makes 1 dozen.
