Old family recipe-Potato leek Soup-Thanksgiving Recipe

          
I promised I would post my Thanksgiving Recipes...here is the first one. This is an old family recipe passed on through generations. I have made this every Thanksgiving as a starter while the Turkey is in the oven. It is really delightful and filling we just have a little cup around lunch time. I make this the day before and reheat on the stove I usually add a little chicken broth because it thickens up while in the fridge-it is even better this way because all the flavors meld. It is really easy, I make it and the pie the day before because I make everything homemade and it is easier on me-I am being truthful:)The pie recipe is out of this world I'll share that tomorrow. I only make it on Thanksgiving and my family devours it.

   Potato Leek Soup
Ingredients:
3-4 Leeks chopped
½ Cup chopped onion
2 ½ Cups (3-5) Potatoes peeled and cubed
2 Celery Stalks chopped
2 Flat Leaf Italian Parsley sprigs chopped
4 Cups Swanson Chicken Broth (2 cans)
¼ Cup Butter
1 ½ Tbsps. Flour
½ Cup Heavy Cream
Salt and Pepper to taste

Directions:
Chop top white part only discard the green leafy part. Rinse well. Cut leaks into thin slices and put in a large bowl of water and swish. Let it sit for moment and the dirt will drain to the bottom. Drain. Put between paper towels for a moment to dry them.
In a Large skillet add butter, leaks and onions and Sautee until lightly browned translucent.
 Meanwhile In a large pot add chicken broth and bring to a boil then add potatoes and cook for 10 minutes.
Lower heat to medium and add onion mixture to potatoes and mash well. I a small container combine heavy cream and flour and whisk until there are no lumps. Bring the potato mixture to high stirring constantly until it boils then add cream mixture stirring constantly until it thickens.  Season with freshly ground salt and pepper to taste.

Serve with salad and fresh crusty bread. Enjoy!

Precious Moments...the first experience of letting go of something Loved


  Recently I shared a precious moment with my son Brandt who is 15. It  all started one day a few years ago he came with came home from school with a turtle the size of a quarter. He found this turtle while walking home from the bus. I said you can keep it for a day and then we will let it go. Three years later...he was ready to let Turtle go. It was bittersweet...turtle made his room smell not so fresh:) But turtle who he never named...was the first pet he took ownership and cared for. Lately we had to keep reminding him..,.turtles tank needs to be cleaned and needs more water. If you have a pet you have to be kind and take good care of it...I reminded him. I said maybe we should let Turtle go?
He came to me the other day and said Mom I want to let turtle go. I said Why? He said I am ready but I want to go Horton Lake. I gave him a week to think about it I didn't want him to regret it.
We took turtle to Horton Lake which is huge beautiful lake. Brandt had gone fishing with his friend and family who has a boat. It was the perfect place for Turtle.
On our way to the lake turtle kept flopping in the bucket-I said is he Ok? Brandt said Mom he does this at night a lot-it keeps me awake.
When he put Turtle in the water-he just sank, I said is he ok? Brandt said Mom lets wait and watch him. I said Ok. He said he is fine he will take off. Boy was he right. Turtle looked up sort looked around and took off with a cloud of sand behind him. We waited until we saw turtle surface. Turtle was going to be just fine.
 I was worried about Brandt. We walked around for awhile and when he was ready we left. He felt like a drink so stopped and got one. I tried to be available if he wanted to talk. I gave him a few extra hugs every so often that night.
He would like to go back and go fishing and see Turtle:)

Healthy Fruit and Amazing Banana Bread Recipe

 
 
 
Make a healthy Breakfast with all the fruit you have. My banana's were getting really ripe-solution make my amazing banana  bread-I add fresh orange juice and Brown sugar on top to push it over the top:)  I used the rest of the oranges I had purchased for a an oriental recipe I am perfecting and made fresh juice for the family-a treat! I used all the fruit I had and make a fruit bowl-good to nibble on if there are left overs for a snack. This recipe makes 4 mini loafs so my son will have one to bring with him to his dorm when he gets the munchies studying:)
 


           Sweet Banana Bread

Ingredients:

1 Cup Sugar

½ Cup Butter-room temperature

2 Cups Flour

1 tsp. Baking soda

1 tsp. Cinnamon in recipe + 1 tsp. extra to sprinkle on before baking

2 tsp. Vanilla

2 Eggs

4 Tbsps. Orange Juice

1 Cup Bananas mashed  

1 Cup chopped Walnuts*keep your nuts cold-freeze them to last longer

1/3 cup Brown Sugar

Directions:

Preheat oven to 350.

In a large bowl mix butter and sugar until creamy. Add eggs, vanilla, bananas and OJ mix well.

In a small bowl add flour, baking soda, cinnamon mix. Slowly add dry ingredients to wet until mixed well. Fold in nuts.
Spray bread pans with bakers Joy-food will  never stick-this stuff is amazing! Divey up batter evenly spread to the edges of pan and make a slit in the middle-this allows the toppings to sink in the bread a little-yum:)
Once in pans sprinkle lightly with cinnamon and heavy with brown sugar (key ingredient makes a light crunchy topping that is delicious)

 4 mini Bread pans 35 minutes

Easy Casserole Recipe for a cold Fall day -Creamy Chicken and Mushroom Casserole



Creamy Chicken and Mushroom Casserole

Ingredients:

1lb. Ground Chicken

1 Tbsp. Olive oil

1 medium Onion chopped

1 clove of Garlic minced

1 can Cream of Mushroom Soup

1/4 cup Milk

¼ cup Chicken Broth

¼ cup White Wine-Pinot Grigio

½ cup Mascarpone Cheese-room temp

1 small package of Mushrooms sliced

2tbsp flat leaf Parsley

2 cups Macaroni Noodles

¼ cup shredded parmesan cheese

Salt and pepper to taste

Directions:

Preheat oven  to 350

In a large skillet brown ground chicken season with salt and pepper to taste. Set  browned chicken aside

In the same skillet  add olive oil mushrooms, onions and garlic cook until onions are translucent.

Meanwhile in a large pot boil salted water and add macaroni noodles cook for  10 minutes.

Drain.

In a bowl combine mushroom soup, milk, broth, wine,  and mascarpone cheese- stir

Combine all ingredients into a large greased casserole dish. Sprinkle with parmesan cheese

Bake uncovered for 35 minutes. Let cool for 5 minutes-Enjoy!
