Chicken and Mushroom Casserole
Ingredients:
1lb. Ground Chicken
1 Tbsp. Olive oil
1 medium Onion chopped
1 clove of Garlic minced
1 can Cream of Mushroom Soup
1/4 cup Milk
¼ cup Chicken Broth
¼ cup White Wine-Pinot Grigio
½ cup Mascarpone Cheese-room temp
1 small package of Mushrooms sliced
2tbsp flat leaf Parsley
2 cups Macaroni Noodles
¼ cup shredded parmesan cheese
Salt and pepper to taste
Directions:
Preheat oven to 350
In a large skillet brown ground chicken season with salt
and pepper to taste. Set browned chicken
aside
In the same skillet add olive oil mushrooms, onions and garlic
cook until onions are translucent.
Meanwhile in a large pot boil salted water and add macaroni
noodles cook for 10 minutes.
Drain.
In a bowl combine mushroom soup, milk, broth, wine, and mascarpone cheese- stir
Combine all ingredients into a large greased casserole dish.
Sprinkle with parmesan cheese
Bake uncovered for 35 minutes. Let cool for 5 minutes-Enjoy!
