Spicy Roasted Tomato and Herb Pasta
I crave this! It is really flavorful:) |
Ingredients:
2 lbs. Plum
Tomatoes-quartered
2 Lbs. Campari-halved
½ cup Olive
oil-divided
4 cloves
Garlic-minced
15 Basil
Leaves-chopped
2 Tbsp. Oregano-chopped
2 Tbsp. Thyme
½-3/4 tsp.
crushed Red Pepper flakes-depending on your level of heatJ
¾ tsp. Sea Salt
½ tsp. Ground
Black Pepper
1 lb. Angel Hair Pasta
1-1 ½ cups Shredded Parmesan Cheese
Directions:
Place Tomatoes, cut side up, on 2 sheet pans.
In a medium bowl mix olive oil, garlic and spices-spoon over tomatoes.
Roast 400 for
45 minutes.
Let cool for 8
minutes.
Food mill |
Pour about a
little at a time in food mill and turn until all that is left is the skins-it
gives you all the delicious flavors.
I put in a large skillet over medium high
heat and reduce for 10 minutes. Add 1 cup shredded cheese stir well and serve
over pasta.
Cook pasta like
directed on package-4 minutes.. Drain. Add 2 Tbsp. butter, salt and pepper to
taste.
Sprinkle with Parmesan
Cheese are nice toppings.
Serve with salad and Italian bread-enjoy!
Notes:
You could use only Plum tomatoes- I personally like the two kinds mixed the flavor is amazing.
*If you do not
have fresh Herbs-use dried or 1 ½ Tbsp. Italian Seasonings-Fresh is always
betterJ
Use a potato
masher if you do not have a food mill-the mill gives you a richer sauce without
the skins.
