Vanilla Poppy Seed Muffins-Moist and Decadent



Vanilla Poppy Seed Muffin Recipe

Ingredients:
1 ½ cups Sugar
½ lb. Butter (2 sticks) room temperature
3 tsp. Vanilla
1 ¼ cup Sour Cream
2 cups Flour
3 Tbsp. Poppy Seeds
1 tsp. Baking soda
4 Egg Whites

Directions:
Preheat oven to 350 degrees.
In a large mixing bowl cream together butter and sugar.
Add vanilla and sour cream. In a small bowl add dry ingredients mix well. Slowly add dry ingredients to wet.
I n a medium bowl beat egg whites with mixer until stiff.
Gently fold egg whites in cake mixture.
Use an ice cream scoop to put batter into to cupcake cups.
Bake for 20-25 minutes-test with tester pic when it comes out clean it’s done. Do not overcook-it will be moist and delicious!- It is worth it to keep checkingJ
Place on cooling rack.
 Cool  for 5 minutes.
Sprinkle with powder sugar or drizzle with vanilla frosting.
