We Love Greek food and were spoiled with really good Greek restaurants close to us so when we moved I had to come up with recipes of our favorites.
I loved it when my oldest son Blake came down stairs last night for dinner, he said, "It smells really good. " He loves food and he comes by it honestly:) I love it when people enjoy the food I make-it makes all the effort worthwhile:)

Greek Chicken Salad with pita and cucumber yogurt sauce |

I do a basic Greek salad and make it ahead so it can get cold -my youngest son Brandt likes it cold. I aim to please:) |
Greek Dressing |
Greek Chicken |
Ingredients:
Cucumber
Sauce:
1 Cup Greek
Yogurt
1/4 Cup Sour
Cream
½ lemon + 2
Tbsp. Fresh Lemon Juice divided
1 garlic Clove
Minced
1 tsp fresh
mint chopped
1 tsp. kosher
salt
1 English hot
house cucumber peeled and grated (Press between several paper towels to absorb
water)
Greek Salad:
2-3 Purple Onion
thin slices then quartered
½ Hot House Cucumber
(they are the ones at the grocery store wrapped individually in plastic really
long) peeled sliced medium then quartered
½ cup Cherub
Cherry Tomatoes
2 heads of
Romaine lettuce chopped
1 cup of
Arugula lettuce
Feta cheese 1/3
of a block-chopped
Greek Salad Dressing:
½ cup Extra
Virgin Olive Oil
1/3 cup Fresh
Lemon Juice
1 Clove Garlic-pressed
½ tsp fresh
mint chopped fine
½ tsp fresh
thyme chopped fine
½ tsp freshly
grated lemon peel
1 tsp. dried Oregano
½ tsp. Kosher
Salt
5 turns of
fresh ground black pepper
Greek Chicken:
3 Boneless
Skinless Chicken Breasts-cut into tenders
Olive Oil 2
Tbsp.
1 tsp Mc
Cormick Greek Seasoning
¼ cup fresh lemon
juice
Salt and Pepper
to taste
1 Pkgs. Pitas
1-2 Tbsp.
Butter
Directions:
In a large bowl
add yogurt, sour cream, and 2 Tbsp. lemon juice, garlic, salt, mint and
cucumber mix well. Refrigerate for at least 2 hours before serving.
Next I make the
dressing and set in fridge to chill.
Greek salad I start
with the lettuce and layer toppings.
In a large
skillet on med heat add olive oil, chicken tenders. Season with Greek
seasoning, salt and pepper then drizzle the ½ of lemon juice over the chicken
cook until golden brown. Flip and season other side and cook until golden
brown. Test to make sure there is no pink in your largest piece. Cut in
med-thin slices-set aside.
In a medium
skillet put a tablespoon of butter melt and put in a pita it will start to rise
a little flip it over and do the same on the other side. Continue until you
have a nice plate of pitas. Take out your sauce.
