Chicken and Fruit Salad with Light Citrus Dressing Recipe
Ingredients:
Salad:
3 heads Romaine lettuce-chopped
2 scallions-chopped
½ tomato-chopped
1/4 of an red pepper-chopped
¼ of an yellow pepper-chopped
¼ of an orange pepper-chopped
¼ cup Cilantro-chopped
2 Boneless Skinless Chicken Breasts
4 Strawberries-chopped
2 Nectarines-chopped
1 Kiwi-chopped
3 Tbsp. silvered Almonds
Dressing:
1 TBSP. + 2 TSP. Fresh Lemon juice
1 Tbsp. Fresh orange Juice
1 tsp. finely grated lemon peel
1 tsp. finely grated orange peel
1 Tbsp. Honey
1 tsp. finely chopped mint
¼ cup Extra-Virgin Olive Oil
Kosher Salt and fresh ground Black Pepper to taste
Directions:
Make dressing and set in fridge while you make salad.
Grill Chicken with salt and pepper to taste. Chunk it and
set aside.
Make salad with greens, vegetables and then fruit and top
with nuts.
Sprinkle Chicken on top. Toss.
I put the dressing on the side
with a ladle to let everyone put on their desired amount.
Enjoy!
I have made it both ways and it is really good-my favorite is grilled but in a pinch rotisserie will do:)
