Refreshing Chicken Salsa Verde Soup
This was really tasty, my family immediately said this is a keeper!
I know a recipe is good when there are no leftovers
-I should have doubled this-it would make a great lunch:)
I liked how light and flavorful it was and that touch of lime brought it over the top.
Ingredients:
1 Rotisserie Chicken
or 2 Poached bone-in Chicken Breasts-meat shredded
4 Cups Chicken Stock or broth
2 tsp. Ground Cumin
1 tsp. Chili Powder
2 cans white northern beans (drained and rinsed)
1 can pinto beans (drained and rinsed)
½ cup chopped cilantro
2 limes-juiced
1 cup salsa verde (recipe below)in a pinch use store
bought-but fresh always tastes betterJ
Garnish:
Fresh cilantro chopped
Sour cream ½ cup
1 avocado chunked
1/2 chopped tomato
Salsa
Verde:
8 tomatillos-husked and rinsed-rough chop(find near tomatos have a weird husk around them similar o corn much smaller)
1 jalapeno de-seeded-rough chop
8 sprigs cilantro-leaves only
¼ onion-rough chop
1 garlic clove-pressed
Salt to taste-fresh ground coarse salt
Directions:
In a food processor
add the tomatillos, jalapeno, onion, cilantro and garlic. Process until smooth.
Add a bit of salt to taste-blend one more time. Set aside.
In a pinch use
a rotisserie chicken but I prefer poached bone in chicken breasts.
Poach chicken breasts Directions:
2 bone in
chicken breasts
1 clove garlic-halved
½ of a bay leaf
1 carrot roughly chopped
1 rib of celery
roughly chopped
1 onion quartered
1 lemon sliced
Fresh flat leaf parsley-a small partial
bunch-about 5 sprigs)-rinsed left whole
Salt and pepper
to taste.
Put into a
large pot cover the chicken breasts with water and bring to a boil. Reduce heat
to low. Simmer for 45 minutes up to an hour depending on size-use meat
thermometer (165 poultry) to see if they are done. Cool.
Shred chicken
and set aside.
In a large pot
add chicken stock, salsa verde, cumin, and chili powder bring to a simmer.
Simmer on low for 10 minutes. Add beans and cilantro and continue to simmer for
5 minutes longer. Next add shredded chicken and lime juice. Season to taste.
Serve with cheese
quesadillas and make it a meal. Enjoy!
