Spicy Pasta Recipe
This is a great go to recipe when you get home late and are in a time crunch and the kids are saying, "Mom what's for dinner?" I always have my pantry stocked for just these occasions. The great thing about having an herb garden is you plant the herbs you use regularly and you simply go outside and you got them whenever you need them fresh and convenient.
Ingredients:
2 Tbsp. Olive Oil
2 cans (28 0z.) Plum whole Tomatoes (great flavor)
1 can 6 oz. Tomato paste
½ tsp. Red Pepper Flakes
15 Fresh Basil Leaves chopped finely
2 tsp fresh oregano chopped finely
Salt 1 tsp coarse sea salt
½ tsp freshly ground pepper
Capunti Pasta
½ cup shredded Parmesan cheese
Directions:
Bring a large pot of salted water to a boil for pasta cook
for 16 minutes. Drain. Set aside.
Meanwhile, in a large skillet pan add olive oil to coat pan
and plum tomatoes-squeeze the tomatoes breaking them up with your hands and add
all the juices. Add the Tomato paste, salt, pepper, red pepper flakes and stir
until combined. Heat on med-low for 10 minutes. Stirring occasionally.
Add fresh herbs and Parmesan cheese-heat until cheese
melts. Add sauce to large pasta pot and heat stirring until warmed through about
3-5 minutes.
Garnish with fresh Parmesan cheese and serve with crusty
bread-enjoy!
Notes:
If you do not have fresh herbs you can substitute 1 Tbsp.
dried Italian herb seasoning.
Fresh herbs just taste so much betterJ
You can use your favorite pasta noodle-adjust cooking time
according to noodle used.
