You can even sprinkle some flour on you because your family think you worked much harder than you did-it will be our secret:)
My son is home from college and is craving home cooking so I indulged him with one of my Mom's recipes she made me and brothers as kids-everyone loves the sugar topping!
Vanilla
Blueberry Muffin Recipe
Ingredients:
2 cups sifted
All-Purpose Flour
3 tsp. Baking Powder
1/2 tsp. Salt
1/4 cup Sugar +
2 Tbsps. divided for sprinkling on top
1 Egg, well
beaten
1 cup Milk
6 Tabs. Vegetable
Oil
2 tsp. Vanilla
1 cup Blueberries
(fresh or frozen)
Directions:
In a Medium
bowl, sift together flour, baking powder, salt and 1/4 cup sugar.
I a large bowl,
combine egg, milk and oil-mix well. Next mix in flour mixture until combined-do
not over mix-lumpy is ok. Gently fold in blueberries.
Fill greased muffin pans 2/3 full. Sprinkle each muffin with sugar.
Bake @ 350 degrees for about 20 minutes. Test
until toothpick comes out clean.
Makes 1 dozen muffins-Enjoy!
