1 wheel Brie cheese, about 5 inches round
2-3 tablespoons raspberry preserves
4 tablespoon sliced almonds, toasted

Directions

2. Place the puff pastry on a parchment-lined baking sheet. Spread the preserves and sliced almonds in a 5-inch circle in the middle of the puff pastry.
3. Place the wheel of Brie on top of the preserves and sliced almonds.
4. Wrap the Brie with the puff pastry, making sure the ends are firmly pinched together, and flip the Brie over so the preserves and almonds are facing up.
5. Bake for 15-17 minutes until golden brown.
6. Serve with crackers, pita chips or crostini.

Herb Puffs on Blue and White Plates

Smoked Gouda and Herb Puffs

Ingredients

1 cup water
2 1/2 tablespoons unsalted butter
1 teaspoon salt
1 cup all-purpose flour, sifted
3 large eggs
4 ounces smoked Gouda, diced
2 tablespoons chives, thinly sliced
1 tablespoon thyme, minced
1 tablespoon cracked black pepper

Directions

1. Preheat oven to 400° F.
2. Place water, butter and salt in a medium saucepan and bring to a boil.
3. Once the mixture has come to a boil, add flour and quickly stir with a wooden spoon until a ball of dough forms, 3 to 5 minutes.
4. Transfer dough into a stand mixer fitted with a paddle attachment and mix over medium speed, allowing steam to escape.
5. Once steam disappears, 2 to 4 minutes, begin adding eggs one by one, scraping down sides of bowl for even mixing.
6. Remove mixture from the stand mixer and gently fold in remaining ingredients.
7. Scoop heaping tablespoons of mixture onto a parchment-lined baking sheet, 1 inch apart, and bake for about 25 minutes, or until golden brown. Serve warm.
OMG! Who would have thought-how yummy!

Ingredients

Avocado Fries
1 avocado, sliced into 1/4-inch slices
1/2 c. milk
1/2 c. flour
1 egg, beaten
Canola oil, for frying
Lime Sriracha Mayonnaise
1/2 cup mayonnaise(my husband does'nt eat mayo so you could substitue with geek yogurt or sour cream)
Juice of 1/2 lime
Sriracha, or other spicy chili sauce

Directions

Avocado Fries
1. Fill a skillet with oil until it is about 1/4- to 1/2-inch full. Heat on high until oil sputters when a drop of water is dropped in.
2. Place the milk, flour and egg in three separate shallow dishes. Beat about 1 tbs. of water into the egg mixture. Dunk a slice of avocado in milk, then flour, then eggs, then back in flour. Place each slice on a plate until you’ve dunked the whole batch in batter.
3. Slowly add the slices to the oil. You don’t want to overcrowd the pan, so stop before they all start touching each other. After about a minute, you’ll see the edges turning brown. This means it's time to flip them over. Allow them to cook for another minute, then remove them from the skillet and place on a plate lined with paper towels.
Lime Sriracha Mayonnaise
To make the mayonnaise, mix together the mayo, lime juice and Sriracha. Add the Sriracha to taste, depending on how spicy you want it. Serve with your avocado fries and enjoy!
