Tuscan Stew-comfort food but healthy and easy one pot meal

 Tuscan Chicken Stew

   
Warm and comforting however very healthy
I made this tonight and my son was very happy-yeah!
 
Ingredients:
3 Boneless skinless Chicken Breasts-chopped into chunks
3 Shallots sliced and quartered
2 Cups Grape Tomatoes halved or 2 (14.5 oz.) cans of Diced Tomatoes
Olive Oil cooking spray
¼ cup Olive Oil
Salt and Pepper to taste
2 cans (15.5 oz.) Great Northern Beans
2 Cups (1-14.5 oz. can) Swanson Chicken Broth
1 tsp. dried thyme
1 tsp. dried Oregano
2 Tbsp. Fresh Flat Leaf Italian Parsley chopped-divided
¼ Cup Parmesan Cheese shredded
 
Directions:
Preheat oven to 400 degrees. Spray large cooking pan with Olive Oil.
Toss chicken, shallots and tomatoes with olive oil, salt and pepper to taste.
Cook for 20 minutes.
In a large skillet over medium heat add shallots, tomatoes, beans, broth, thyme, 1 Tbsp. parsley and oregano.
Stir and simmer for 4 minutes. Add chicken simmer for 15-20  minutes until reduced
Garnish with parsley and shredded parmesan cheese. Serve with crusty fresh bread. Enjoy!
